Android 8 was released several months ago, but in the version of the screenshot of Android 7 there is no OTA update, so I was wondering if Android 8 via OTA could ever arrive, has it come by chance?
Now I can't lost all my data, so I'm waiting for the OTA.

This is exactly what's happening to my phone (I have the same version of Android 7), a solution for this issue would be great.

The only solution is to flash it, It's happened to me many a time on many a phone. The update is released but for some reason the phone won't recognise it :/

So the only choices are leave it as it is now or flash it and lose all data?

If you want to update to Oreo, you'll have to perform a local update. It's not flashing, it's easyer. Please follow this link:
viewtopic.php?f=192&t=436084As stated MANY times, a factory reset (=losing your not backed up data) is reccommended after each update to avoid any kind of weird issue.
