What are steps to get latest android 7 without bricking or any other issues?

First you should update your phone's rom one by one.

2. Setttings--about phone--wireless update---check for updates

but it says it is up to date even it is old Android 6 1011

Before upgrading to android 7 can i save all settings/apps etc
so it dont get wiped?

You can try a local file update (menu in OTA update checker) or flash it over a computer.

You can go straight to the latest, it won't harm your device in any way.
Flashing solutions can be either local update on your phone, or via pc, if local update does not work follow my guide
